Ingredients:
• 1 Tbsp olive oil
• 1 lb boneless skinless chicken breasts, cut into 1-inch cubes (recipe can be made with either dark or white chicken or a mix of both, including chicken thighs and breasts)
• 1/4 cup low-sodium soy sauce
• 1/4 cup water
• 2 Tbsp honey
• 1 1/2 Tbsp packed light brown sugar
• 1 Tbsp rice vinegar
• 1/4 tsp toasted sesame oil
• 2 tsp peeled and minced fresh ginger (or 1/4 tsp ground ginger)
• 2 tsp peeled and minced fresh garlic (2 cloves or 1/4 tsp garlic powder)
• 2 tsp cornstarch
• Sesame seeds and chopped green onions, for serving (optional)
Directions:
1. Heat olive oil in a 12-inch non-stick skillet over medium-high heat.
2. Add cubed chicken and cook for about 4 minutes on each side, or until the internal temperature reaches 160°F.
3. While the chicken is cooking, add soy sauce, water, honey, brown sugar, rice vinegar, sesame oil, ginger, garlic, and cornstarch in a small bowl. Whisk until well-combined.
4. Toss sauce with the cooked chicken in the skillet for about 60 seconds, or until the sauce has thickened.
