Grill Steak Guide

On a gas barbecue, there are two essential elements to grilling the ideal steak. The first is to ensure that your steak is at room temperature before cooking. You can accomplish this by removing your meat from the refrigerator at least 20 minutes before you intend to begin cooking. By bringing the meat to room temperature before grilling, you can avoid any cold spots and ensure that the meat cooks throughout the whole grilling procedure. An quick read meat thermometer is a must buy if you don’t already have one.

Setting the appropriate grill temperature and bringing the grill to a steady temperature before cooking is the second essential step. We advise adjusting the burner temperature to a high heat if you’re using a gas grill. It would be close to 450oF. Keep an eye on the grill because the temperature can sometimes rise slowly. We have a Weber grill, and I personally like to start it with the dials set at the highest temperature before quickly lowering them to roughly medium. Every grill is a little bit different, but after using your grill a few times, you’ll know the settings to get a 450°F temperature.

How much time should a steak be cooked on a gas grill?
Now that the grill is hot, we can look at various cook times depending on how well done you want your meat to be. The thickness of the steak is the other factor to take into account. Steaks that are thinner will cook more quickly while steaks that are thicker may take longer to reach the proper temperature.

Here are the average cook times when using a gas grill to cook steak:

Medium Rare: 4-5 minutes on the first side, flipping and grill for an additional 3-5 minutes
Medium: 5-7 minutes on the first side, then an additional 5-7 minutes after flipping
Medium Well: 8-10 minutes on the first side, and another 8-10 minutes after flipping
As a reminder, keep in mind the thickness of the cut. Depending on the size of the steak, you may need to add some additional cook time. Check out our steak temperature guide to find the right temp and times for your steak.
